SWEET CORN VEGETABLE SOUP

Enjoying a warm bowl of sweet corn veg soup would be a really comforting food especially during the winter season.Kids’ will definitely love this soup since this one is very mild in spiciness.It’s very simple and easy to make and at the same time healthy too.Here’s the recipe :

INGREDIENTS

Canned Sweet corn Kernels -3/4th cup

carrots -1/4th cup

Beans -1/4th cup

Garlic -2 cloves

Ginger Ginger -1/2 inch piece

Chopped spring onion -3 tbsp

Butter -2 tbsp

Pepper powder -1 tsp

Soya sauce -1 tbsp

Vinegar -1 tbsp

Cornflour-2 &1/2 tbsp

Salt as per taste.

METHOD

Take a blener jar and add 1/2 cup of corn kernels along with 1/4th cup water.Grind and make a coarse paste out of it.Keep it aside.

Heat 2 tbsp of butter in a pan ,add finely chopped ginger and garlic ,saute it well and wait until it’s raw smell goes off .

Once it turns pale yellowish colour add chopped carrots and beans .

Saute it for few minutes in a medium flame .

Add 1/4 th cup of corn kernels and chopped spring onions.Stir it well.

Then we need to add coarsely ground corn paste . Mix it really well. corn paste will impart a nice aroma and flavor for soup .

Add 3 cups of water,pepper powder and salt.

Mix it well .

Cover this up with a lid and bring this to boil.

Once it starts boiling add soya sauce and vinegar.

Prepare con flour slurry by adding 2&1/2 tbsp of corn flour in a mixing bowl along with 1/4 th cup of water.

Make sure corn flour batter is so smooth and free of any lumps.

pour into soup and mix well.Once it starts to thicken switch off the flame and keep it aside.

Sweet corn soup is ready to be served.

SUGAR FREE BANANA PUDDING

Today i am going to share with you one of the simplest dessert recipes which belongs to the category of firless cooking .All you need to do is put some sliced bananas in the freezer section in advance .For the creamy and smooth banana pudding always use frozen bananas.This no sugar dessert can be enjoyed either as a breakfast or as a snack ,which will leave you feeling satisfied and full till the very next meal.Here’s the recipe :

INGREDIENTS

Sliced frozen bananas -2

Cocoa powder -2 tbsp

Milk-1/4th cup

Honey -1 tbsp

METHOD

  • Take a blender jar and add all the ingredients (banana slices,milk,cocoa powder and honey)
  • Transfer into a pudding bowl.
  • Add some chopped fruits and nuts .(apple,dates ,cashews etc.)
  • Serve and enjoy your meal.

MOONG DAL LADDU

Wholesome and nutritious Moong dal laddus are one of my favorite desserts to devour during any special occasion.These ladoos are soft,grainy in texture and absolutely melts in your mouth .you can make batches of these laddus and store them at room temperature for a week.

INGREDIENTS

MOONG DAL -1 CUP

POWDERED SUGAR-1/2 CUP

GHEE -1/2 CUP

CARDAMOM POWDER -1/4TH TSP

METHOD

  • Rinse moong dal thoroughly and soak it for 30 minutes .
  • After 30 minute drain water and spread it on a cotton cloth .Let it air dry for 20 minutes.
  • Take a heavy bottom pan and add moong dal , dry roast it for 30-35 minutes in medium flame.
  • Once you notice it’s colour changes into slightly golden ,switch off the flame and allow this to cool for a while.
  • Take a blender jar and grind it and make a coarse powder out of it.
  • In a mixing bowl add coarsely ground moong dal powder ,powdered sugar and cardamom powder.
  • Add melted ghee gradually and keep mixing until everything get incorporated really well.
  • Let’s make laddus.
  • Take a small portion of the mixture and roll into ball shape .
  • Prepare all laddus following the same procedure.
  • Soft and grainy textured moong dal laddus are ready to serve .

STEP BY STEP INSTRUCTION WITH PICTURES

Wash and soak moong dal for 30 minutes
Drain off water completely and spread it on a towel and let it air dry for 15 minutes
Dry roast moong dal for 30 -35 minutes.Once it’s colour turns slightly brown ,keep aside.
Let it cool well.
Using a mixer grinder ,grind and make coarse powder out of it.
Take a mixing bowl,add coarse mixture of moong dal ,cardamom powder and powdered sugar.Mix it well.
Gradually add melted ghee and give it a good mix.
Make laddus out of it .
Soft and melting laddus are ready .

NO COOK APPLE CARROT SANDWICH RECIPE

INGREDIENTS

Bread slices

Grated apple-1

Grated carrot -1

Mayonnaise-1&1/2 tbsp

cinnamon powder -1/2 tsp

METHOD

  • Finely grate apple and carrot separately
  • Squeeze out the moisture from apple and keep it aside. Excess moisture from apple will make the sanwiches soggy.
  • Take a bowl and all grated apple and carrot.
  • Add cinnamon powder and mayonnaise which will give a unique flavor for the filling.
  • Filling is ready.
  • Take two bread slices ,trim the edeges and add prepared filling in one of the bread slices .cover it with another slice of the bread .
  • Prepare all sandwiches this way.
  • As a healthier version we can use whole meal bread or brown bread slices for making sandwiches.

MASALA PEANUT /RAJA SPECIAL MASALA PEANUT

Masala peanut or Raja Special masala is one of my favorite snacks which i love to much on while binge watching some movies or TV shows .peanut chaats can be considerd as a healthier alternative compared any other deep fried snacks .This less oil recipe requires very few ingredients which will be readily available at home .

INGREDIENTS

Peanuts-1 CUP

chaat masala -1 tsp

kashmiri chilli powder-3/4th tsp

lemon juice-1 tbsp

tomato -1/2 piece

green chillies -2

coriander leaves

salt

grated cucumber -1 tbsp

coconut oil -1 tsp

METHOD

  • Take 1 cup of peanuts in a microwave safe bowl .Microwave for 5 minutes.
  • Take a pause in between and give it a quick stir .
  • After 5 minutes ,peanuts would turn into hot and crisp.
  • Let it cool down.peel the skin off from peanuts.It’s a bit time cosuming process.But it’s worth it.
  • Once it is clean add all other ingredients.(Chaat masala ,kashmiri chilli powder,onion,tomato ,green chillies,cucumber ,coriander leaves,lemon juice ,s and salt)
  • Mix well.
  • Finally drizzle some coconut oil for some extra flavor.
  • spicy and tangy flavored Peanut masala will be ready to serve.

Take 1 cup of peanuts in a microwave safe bowl

INSTANT RAVA LADDU

Rava ladoo or sooji ladoo is one of the easiest beginner friendly indian sweet recipes.These instant ladoos can be prepared quickly with minimum ingredients .If you would like to try some simple and hassle free homemade sweets which will suit for any occassion ,Rava Ladoos will be the right choice.Let’s see how to make it :

INGREDIENTS

Rava -1 cup

Milk-3/4th cup

Ghee-2 tbsp

condensed milk -1/2 cup

Turmeric powder -A pinch

Dessicated coconut-2 tbsp

Cardamom powder -1tsp

cashew nuts&raisins

METHOD

  • Heat a Heavy bottom pan and add ghee.
  • Once the ghee is heated up fry cashews and raisins.When it’s colour turnes slightly brown colour ,take it out of the pan and keep aside.
  • In the same pan ,add rava ,roast it in a low to medium flame until it becomes aromatic and slightly crisp in texture.
  • Add a pinch of turmerc in 3/4 th cup of hot milk.Mix it well.
  • Add Milk into rava along with 1 tsp of caradamom powder.Mix well.
  • Milk will act as a binding agent which will help to give a proper shape for the ladoos.
  • Add fried cashews ,raisins and condensed milk.
  • Condensed milk will make the ladoos really sweets and moist.
  • Then add some dessicated coconut which will give a unique flavor for ladoos.
  • Switch off the flame and keep this a side for a while .
  • Once the heat is manageable ,take some portion of rava and shape it like ladoo.
  • Rava ladoos are ready to serve .

NOTE:

For longer shelf life we can skip milk and increase the qutity of ghee and condesed milk.

PUNJABI CHANA DAL CURRY

Punjabi style simple and flavorful chana dal masala will beome quickly a go to recipe in your household.I am sure ,It’s tempting hue of spices and aromatic flavor will revive your taste buds .Let’s see how to make it:

INGREDIENTS

Chana Dal -1&1/2 cup

Garlic cloves -3

Small sized ginger

Green chillies -2

Onion-1

tomato -1

Bay leaf -2

Turmeric powder -3/4 th tsp

kasmiri chilli powder -2&1/2 tsp

Coriander powder -1 &1/2 tsp

Mango powder -1 tsp

salt

Oil- 2 tbsp

water -3 cups

FOR SEASONING

Oil-1&1/2 tbsp

cumin seeds -2 tsp

Dry red chillies -5-8

METHOD

  • wash and Soak chana dal for 20 minutes.
  • Take a pressure cooker ,add soaked chana dal along with 1/4th tsp of turmeric powder and 3 cups of water .
  • Pressure cook the dal until it is nice and soft but not very mushy.It may take around 3-4 whistles .
  • Add 3 tbsp of oil in a large pan on a medium heat ,temper it with some bayleaves .
  • Then add finely chopped ginger ,garlic and green chillies.Saute it well to get rid off the raw taste.
  • Next add chopped onion ,saute it till it becomes transluscent.
  • Add some chopped tomatoes ,saute until it is soft and mushy.
  • Spice it up with some masala(turmeric powder,kashmiri chilli powder,coriander powder and mango powder).
  • saute the masala in a low heat for 2 minutes .
  • Add cooked chana dal and pour enough water as per the desired consistency of the curry.
  • Add salt
  • Cover this up with a lid and bring this to boil for few minutes.
  • Let the curry absorb all the flavors of masala.
  • For tempering Heat oil in a pan and add cumin seeds and dry red chillies ,pour it over the curry.
  • Serve hot with some chapathi ,rice etc.

Wash the chana dal properly and soak it for 20 minutes .

Add1/4th tsp of turmeric powder and 3 cups of water .

Pressure cook up to 3-4 whistles .

Cooked chana dal

Saute all the veggies for few minutes .

Add masala .Turmeric powder ,Kashmiri chilli powder ,Coriander powder ,Mango powder .

Add cooked dal.

Add water for Adjusting the thickness of the curry.

Simmer it on a medium flame for few minutes.

Pour the tempering over the curry .

PEANUT CHUTNEY

Healthy and nutritious peanut chutney is a great substitute for the regular coconut chutney to serve along with dosa and idli ,if you want to try a unique and flavorful chutney variety .The key is use fresh peanuts and also make sure not to overboard with spices. Unlike coconut chutney which we usually serve along with South Indian breakfast dishes ,peanut chutney will remain fresh up to 3-4 days inside the refrigerator.Here is how to make it:

INGREDIENTS

Peanuts-1 cup

Kashmiri chillies-5

Garlic-2

Cumin seeds- 1/2 tsp

Tamarind pulp- 1 small piece of tamarind soaked in warm water.

Salt- as per taste

Water

Method

Heat a pan and roast peanuts  for few minutes.

Once it starts to crackle ,switch off the flame.

Once it cools down remove the skin and keep aside.

Take a blender jar add all the ingredients and grind it to make a smooth paste.

For seasoning fry some mustrds seeds ,urad dal,dry red chillies and curry leaves .

For seasoning

Mustard seeds- 1 tsp

Urad dal -1 tsp

Dry red chilly-2

Curry leaves- 1sprig

Oil- 1 tbsp

Roast peanuts for few minutes .Once it becomes crisp ,switch off the flame .
Peel off the skin

Grind by adding kashmiri chilli,tamarind pulp ,cumin seeds garlic and water .

Add salt and adjust the consistency by adding some water.

CORN FLOUR HALWA

If you are looking for the recipe for the best corn flour halwa you are at the right place . This sweet dish can be prepared with simple ingredients and tastes simply awesome.

INGREDIENTS

Corn flour -1 cup

Water-3&1/2 cup

Sugar -2 cup

Cardamom powder-1tsp

Ghee-2tbsp

Orange food colour

METHOD

  • Take amixing bowl and add cornflour,pour 1&1/2 cup water and mix it well and make sure the batter is clean and smooth.
  • Add 1 tsp of food colour of your choice ,for this recipe i am using orange food colour which will make the halwas more visually appealing.
  • Take a pan add 2 cups of sugar along with 2 cups of water.Bring this to boil and make sugar syrup.
  • Once the sugar syrup is ready ,pour prepared cornflour batter and cook it for few minutes in a medium flame.
  • Keep stirring the batter and once it starts to thicken add cardamom powder .
  • Finally add some ghee and mix well.
  • switch off the flame, once the batter starts to remove from the edges of the pan.
  • Transfer it into a pan .
  • Allow this to cool by refrigerating for about 1 hour.
  • After 1 hour halwa will be thick enough to cut into slices .
  • Garnish with some sliced nuts on top of it.
  • serve and enjoy.

once the batter starts to thicken ,transfer into a pan
refrigerate and let it cool for about 1 hour.
sprinkle some sliced almonds .Cut and serve.

HOMEMADE CHOCOLATE CHIP OATS COOKIES

If you have sweet tooth like me and craving for some chocolate dessert ,you can try definitely try out this recipe.Homemade chocolate chip oats cookies can be prepared easily by any novice baker without spending much time in the kitchen .Chocolate chip cookies are most popular among the all cookies types .we can definitely have some fun time with our kids by letting them enagage in the baking process.

INGREDIENTS

Rolled oats -1 cup (1 cup =250 ml)

Wheat flour-1/4th cup

Baking powder-1 tsp

salt -a pinch

Cinnamon powder -1/2 tsp

Butter -100 gms

Brown sugar -1/2 cup

Egg -1

Vanila essence -1/2 tsp

METHOD

  • Take a mixing bowl and add butter which is in room temparature .
  • Add brown sugar ,using a hand mixef beat until they become well combined .It should form into a creamy anf light texture.
  • Crack one egg and pour some vanila essence ,beat it for another 1 minutes in a medium speed .
  • Using a seive sift all the dry ingredients (wheat flour,baking powder,salt and cinnamon powder.
  • mix well.
  • add rolled oats ,and mix it with a spatula .
  • Finally add chocolate chips generously.Fold the batter with a spatula ,make sure chocolate chips are spread into the batter evenly.
  • Take baking tray and line it with a butter paper .
  • Using a spoon divide the cookie dough equally on the baking tray.
  • preheat the oven for 10 minutes @ 180 degree.
  • Bake the cookies for 18- 20 minutes @180 degree.
  • After 18 minutes ,once you take the cookies out of the oven it may be super soft.
  • let it cool well ,then cookies will turn out chewy and soft.
  • you can bake for few more minutes ,if you would like to have a crispy texture.

NOTE:

  • Using brown sugar will give ligher and softer texture for the cookies.

we can definitely substitute with powdered sugar if it is not available.

  • Flaky and fibre rich rolled oats are best suited for these cookies .

STEP BY STEP METHOD WITH PICTURES

Beat butter ,sugar ,egg and vanila essence ,wait for a creamy texture.

Sift all the dry ingredients .

Mix well

Add oats

Add chocolate chips

Mx well

Equally dividing the dough.

Bake @180 Degree for 18 -20 minutes.

Let it cool completely
